Gumbo is a cross between soup and stew, a hearty, aromatic and tasteful dish, almost a delicacy.

There are many options, but the basic principles or components of gumbo or, as they are sometimes called, gumbo are unchanged: low-fat saturated broth (and there are even options with cream), flour portion from fried flour or cooked rice, seafood and / or meat products (from shrimp to bacon !), vegetables and aromatic spices.

I propose a version of the classic Gumbo soup based on chicken broth, cooked with bay leaves, its "meat" of seafood and fish, the vegetable part of onion, green beans and tomatoes, and as spices, garlic and aromatic "Provence herbs".

Put cooked washed long grain rice.

If you will thicken with fried flour, first of all do it, and then add vegetables to the pan, but I skip the flour step and fry the onion and garlic first.

Then add the tomatoes in my own juice

and after a couple of minutes, green beans and sometimes, at the request of stem celery.

Vegetables should boil.

Add pieces of fish to the boiling vegetable mass and simmer everything together over medium heat.

From the frozen assortment of seafood, consisting of shrimp, mussels, squid, cuttlefish and scallops, remove excess icing by simply pouring cool water in a colander and pour them into boiled chicken stock, and then the vegetable mass with fish.

Add aromatic spices and cooked rice to the soup.

Gambo soup variation is ready.

To my taste and opinion, this dish is not just soup, but a full dinner. The first and second - two in one!

How to cook gumbo

Products
Smoked meats (brisket, sausage, chicken, sausages) - 50 grams of each type
Seafood (peeled king prawns, squid rings and mussels) - 70 grams of each seafood
Chicken thighs - 2 pieces
Gumbo fruits (okra) - 1.5 cups
Celery - 3 stalks
Green bell pepper - 1 piece
Tomatoes - 3 large
Garlic - 3 prongs
Onions - 1 large head
Olive oil - 3 tablespoons
Butter - 80 grams
Bay leaf - 2 leaves
Flour - 4 tablespoons (75-80 grams)
Cayenne pepper - 2 pinches
Black pepper - 0.5 teaspoon
Salt to taste
Vinegar - 1 glass

How to cook gumbo soup
1. Boil chicken broth from the noodles and 2 liters of water for half an hour.
2. Remove the chicken from the broth, separate the meat from the bones and sprinkle with seasonings.
3. Peel the shrimp, put the shells and shrimp heads in the chicken stock and cook for half an hour, then strain the stock.
4. Wash 1.5 cups of okra and 3 stalks of celery, cut across.
5. Peppers, peeled seeds and stalk, cut into small cubes.
5. Heat a thick-walled pan, pour olive oil.
6. Put boiled chicken in a pan, fry for 3 minutes.
7. Add chopped onion and chopped garlic, pepper and celery.
8. Chop the smoked meats and add to the pan.
9. Pour in half a liter of broth and simmer the future gumbo over a quiet fire for half an hour.
10. Put butter in a frying pan and melt it.
11. Pour flour into boiling oil.
12. Fry over medium heat until golden brown.
13. Pour the remaining broth into the pan and stir the flour with active movements until the sauce is even, boil and pour into the soup.
14. Stuff okru, pepper and tomatoes in oil for 7 minutes, then add to gumbo and cook for 5 minutes.
15. Put shrimp in the soup, cook gumbo for another 3 minutes.
16. Salt gumbo to taste and cook for another 2 minutes.
Serve gambo soup on flat plates, garnished with greens. Serve rice for gambo garnish.
